Ingredients

200 g glutinous rice flour

100 g sugar

300 ml water

1 teaspoon ground cinnamon

100 g mixed dried fruits (raisins, dried apricots, dried figs, etc.)

1 pinch of salt

Cornstarch for sprinkling


Preparation

In a large bowl, mix the glutinous rice flour, sugar, cinnamon powder, and a pinch of salt.

Add the water little by little to the dry mixture, stirring constantly until you get a smooth, homogeneous dough.

Add the chopped dried fruit to the dough and mix well so that it is evenly distributed.

Cover the bowl with a damp cloth and let the dough rest for 30 minutes.

Prepare a steamer and fill the bottom with water, then bring to a boil.

Lightly grease the mold where you will cook the mochi with a little oil and sprinkle with cornstarch to prevent it from sticking.

Pour the batter into the prepared pan and smooth the surface with a spatula.

Place the mold in the steamer and steam for 30-35 minutes, or until the mochi is cooked and translucent.

Remove the mold from the steamer and let it cool for a few minutes before removing from the mold.

Once cooled, sprinkle a little more cornstarch over the mochi and cut it into portions.
