Christmas Kisses Cookies






A croation cookies with a shortcrust biscuit , nut  filling and meringue topping . It is a amazing cookie which combine 3 tasty desserts. 


INGREDIENTS 

 150 g all purpose flour 

50 g powdered sugar

  1 teaspoons vanilla extract or 2 tsp vanilla sugar 100 g butter (room temp.) 

 1 egg yolk 

salt   , a pinch

1 tablespoon cold milk 

Nut filling-

 100 g ground hazelnuts or almonds or another nuts 

 3 tbsp of honey  

1tsp lemon juice 

Meringue-

lemon juice 3 tsp

 3 egg whites

 210 g sugar 

50 g melted  dark chocolate to decorate 



Add  flour ,sugar ,vanilla extract or sugar and butter to a bowl . Add egg yolk and mix with spatula to resemble crumbs .Then add milk and make a dough. 

Then wrap it in a plastic wrap and refrigerate for 10- 15 minutes. 

Unwrap the dough and roll in a floured surface  in to 4- 5 mm thickness .

Cut 3mm discs from it and keep in a tray with greased parchment paper. 

Mix nut powder with honey and lemon juice. 

Take about 1 teaspoon of nut mixture and make balls .Top cookie discs with them.

In another bowl beat egg whites with salt for 10 minutes while adding sugar. When it is stiff add lemon juice .Beat a little and add mixture to the piping bag .

Preheat oven on 160 to 170 c for 10 minutes. 

Pipe meringue over cookies and bake for 12 to 15 minutes. 

Melt chocolate in a double boiler and drizzle over  cookies.
