Ingredients
500 grams of rice flour
250 grams of sugar
1 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon pandan extract (optional)
1 liter of coconut milk
food coloring (red and green)
banana leaves (to line the mold)
Preparation
In a large bowl, mix the rice flour, sugar, and salt.
Add the coconut milk little by little while mixing until you get a smooth, homogeneous dough.
Divide the mixture into two equal parts. To one part, add the vanilla extract and a few drops of red food coloring. To the other part, add the pandan extract and green food coloring.
Line a steamer pan with banana leaves, making sure to cover the edges well.
Pour a layer of the red mixture into the mold, approximately 1 cm thick. Steam for 10 minutes.
Remove from the steamer and pour a layer of the green mixture over the red mixture, also 1 cm thick. Steam for another 10 minutes.
Repeat the process alternating layers of red and green mixture until the mixture is finished, making sure to cook each layer for 10 minutes.
Once all the layers are cooked, let the kueh lapis cool before unmolding.
Cut into portions and serve as a delicious festive dessert.
