New Year caponata

 


A festive and flavorful caponata perfect for celebrating the New Year! This dish combines a variety of vegetables with a sweet and tangy sauce, creating a delicious medley of flavors.

Ingredients

1 large eggplant, diced

2 bell peppers, diced

1 red onion, diced

3 celery stalks, diced

1 cup cherry tomatoes, halved

¼ cup raisins

¼ cup pine nuts

¼ cup red wine vinegar

¼ cup honey

2 tbsp capers

¼ cup olive oil

¼ cup chopped fresh parsley

¼ cup chopped fresh basil

¼ tsp red pepper flakes

½ tsp dried oregano

½ tsp dried thyme

½ tsp dried rosemary

Salt and pepper to taste

Preparation 

 Preheat the oven to 400°F (200°C).

Place the diced eggplant, bell peppers, red onion, and celery on a baking sheet. Drizzle with olive oil, season with salt and pepper, and roast in the oven for 25-30 minutes until vegetables are tender and slightly caramelized.

 In a small saucepan, combine red wine vinegar, honey, capers, raisins, red pepper flakes, oregano, thyme, and rosemary. Cook over low heat for 5-7 minutes until the mixture thickens slightly.

 In a large mixing bowl, combine the roasted vegetables, cherry tomatoes, pine nuts, and the vinegar mixture. Mix well to coat the vegetables evenly.

 Garnish the caponata with chopped parsley and basil. Adjust seasoning with salt and pepper as needed.

Chill the caponata in the refrigerator for at least 1 hour to allow the flavors to meld together before serving.
