New years cod

 


 New Year's Codfish promises to make your supper tastier and more irresistible. This fish has become part of the  new year menu  of the Portuguese. There are different ways to prepare cod, and the big difference is in the seasoning
 Changing the menu a little is very good, and why not do it on New Year's Eve? Eating fish at New Year's Eve is good for your health and leaves your body feeling lighter, ready for the next day. Just like Christmas, food is great on the first day of the year, so the option of fish on New Year's Eve. The most important thing in preparing cod is knowing how to choose the oil for the recipe. So you don't have a mistake, always buy the best.

Preparation time ; 45 minutes 
Serves ;4

 Ingredients
4 slices of cod  without the skin 
2 kilos of potatoes in slices 
2 onions cut into thin rings
 1 leek, cut into thin slices, but only the white part 
 4 cloves of garlic cut into very thin slices 
3 boiled eggs cut into cubes 
 1 red bell pepper cut into cubes
50 grams of bacon cut into small strips pitted black olives 
 good quality olive oil 
chopped parsley 
salt and freshly ground black pepper

 Remove salt from cod. Then, heat a large pot with plenty of water and bring to a boil.

 Dip the cod and let it boil. Reserve. Use the cod water to cook the potatoes. Then fry the bacon and peppers in a frying pan. Season with onion, garlic, pepper and salt to taste.

 To assemble the dish, take a refractory, cover with olive oil and make a layer with leek. Place the potato slices, the codfish and the other ingredients. You can decorate with chopped boiled egg and olives. 
Fill the dish with olive oil up to ¾ of the way up and place the codfish in oven until cooked.
