Ingredients

 The required amount of water
500 grams of salt
700 grams of refined sugar
1 Piece of turkey (approximately 5 Kilogram) clean and thawed
1 cup fresh thyme
1 Cup of sage leaves
0.25 cup allspice
4 tablespoons whole cayenne pepper
2  of yellow onion
4  of shallot
4  of carrot in quarters
2  of yellow lemon in halves
2  of bay leaves
1 of orange slices
1 cup of semi dry white wine
1 tablespoon olive oil
3 tablespoons olive oil
2of garlic clove
1  of onion in medium squares
2 of tomato 
1  of chipotle chili pepper marinated
20of Seedless Prune
3 Cup unsalted turkey or vegetable broth
1 tablespoons Worcestershire sauce
0.5 Mug of beer
1 pinch of salt
1 pinch of black pepper
1 sprig of fresh oregano
1 fresh bay leaf
Preparation
For the turkey:
Mix the salt and sugar in 2 liters of cold water.Make sure the turkey is clean and well thawed. Place it in a dish large enough to insert and cover with liquid.
Add the brine (a mixture of water, salt and sugar) in the dish with the turkey and add more water until the bird is completely covered. Add the herbs and peppers.
Let stand 2 to 3 hours for the brine to soften the meat and the turkey to become even juicier. After time drain the liquid and dry the turkey with a clean cloth. Arrange the vegetables and wine on a cookie sheet, place a rack, and top with the turkey. Varnish it with the olive oil.
For the sauce:
Heat the oil in a pot or deep frying pan, throw in the garlic, onion and tomatoes.
When they turn golden, add the marinade and plums.Cook for two minutes, add the broth, English sauce and beer.
When it comes to a boil, incorporate all the ingredients in your blender, strain and return to the pot.Add salt, pepper, oregano, and bay leaf to increase the flavor.
Cook over low heat for 5 minutes or until slightly thickened.Divide the sauce into two equal parts.
For baking:
Preheat your oven to 200ºC.Brush the turkey with half of the plum sauce.
Make sure the outside and inside are covered with the sauce.Cover everything with aluminum foil and bake at 180ºC for one hour.
Remove the foil and continue baking until it turns a uniform golden color.Varnish it with the juices that fall on the tray or with a little sauce if you notice that the skin is too dry.
Bake the turkey until when you chop it with a fork, the liquids are clear, which means that it is well cooked. A turkey of this size will take STEP 2: 5 to 3 hours in the oven.
