Ingredients:
2 tablespoons of oil
1 tablespoon of butter or margarine
1 cup of chopped bacon
1 cup of chopped pepperoni sausage
1/2 chopped medium onion
1/2 chopped medium red pepper
2 chopped garlic cloves
1/2 cup of chopped olives
1/2 cup of raisins (optional)
3 cups of corn flour or cassava flour
parsley to taste
salt to taste
Preparation
In a saucepan, heat the oil over medium heat and add the butter.
When the butter starts to melt, add the bacon and pepperoni.
Let it fry for a while and when it starts to brown, add the onion and pepper.
If your bacon is too fat, remove some of the excess, but not too much.
Let it simmer a little and finally add the garlic
saute a little more and then add the olives, the raisins.
Saute for 1 minute and add 3 tablespoons of water.
Mix and then add the flour and stir well.
Finally, add the salt and add parsley.
Stir for another 3 minutes, turn off the heat and transfer to a bowl or platter.
