New years chicken

Cooking time ; 2 and 1/2 hour

Ingredients 

1 whole chicken-2.5 kg

6-7 medium-sized baby potatoes

6 baby carrots

2 heads of garlic-cut in half

10 brussels sprouts,10-15 shallots

1 celery stalk,1 celery stick-8

1 orange,cut into pieces

3-4 sprigs of rosemary

2-3 tablespoons of olive oil

Salt

Black pepper

1 beetroot

1 glass of water

Filling of your Chicken

1 orange

60 gr. butter-melted

2-3 cloves of garlic thyme
 
1 tablespoon flour

1 glass of water
 
1 tablespoon pomegranate syrup

1/3 pomegranate seeded


Preparation 

Cut your baby potatoes in half.Cut your garlic in half.Tear off the leaves on your Brussels  sprouts.Peel the shallots.Roughly chop the celery stalk.Peel the celery and slice it into 8 pieces.Add all your vegetables to a baking dish.

Divide your orange into 4 as apple slices.Squeeze the juice from 2 slices and
add them to your bowl.Put the other 2 slices into your bowl.Add rosemary,olive oil,salt,black pepper and water and mix with your hand.

Then cut your beet in half and put it in your baking dish.

Wash your chicken and dry it thoroughly, including the inside.Cut off the tip of your chicken's wings with a knife and put the cut
parts into your baking dish.

Cut 2.5 meters of your baking twine.Tie your cnicken securely with oven string to secure the legs and wings to the body.

Place your oven rack inside your baking tray,put the tied chicken on it,wrap it first with baking paper and then aluminum foil,and bake it covered for 2 hours at 200 degrees.

At the end of the time,remove the papers from your chicken.Spread 1/3 of the melted butter on your chicken.Put it back in the oven.Add finely chopped garlic and thyme into the remaining butter and mix.After 15 minutes,spread it on your chicken and cook for another 10 minutes.


Place your chicken in the Topping the middle of the plate you will serve it on.Place vegetables on the edges. 

Add the remaining liquid in your baking dish to the stove along sauce with your baking dish with  flour,water, pomegranate syrup and pomegranate  and mix with a whisk.Heat in stovetop.

 When your sauce thickens, put in  a serving bowl.Serve with Chicken .
