New years rissotto



If you're looking for a delicious and festive way to ring in the new year, look no further than this New Year's risotto. This creamy and flavorful dish is made with arborio rice, which is a type of short-grain rice that is perfect for risotto,lentils ,tomatoes and apricorts. The rice is cooked in a vegetarian  broth until it becomes tender and creamy. Then, it is stirred with grated Parmesan cheese until it becomes smooth and velvety. The finished dish is garnished with fresh herbs  for a touch of color and flavor


 The lentils are added ad they brings luck according to the tradition .


Preparation time ; 40 minutes 

Serves ; 4

Ingredients 

Broth

3 liters of water

1 of peeled carrots

1  peeled onion

1 units of peeled potato

2 celery stalks


Risotto

3 tablespoons olive oil

1 cup chopped onion

1 cup of chopped apricorts

1 cup of cherry tomato 

2 cup arborio rice

1 cup of sparkling wine

1 cup of lentil 

1 1/2 cups grated parmesan

3 tablespoons of butter

chopped parsley and to taste

salt to taste


Preparation 

Broth : In a pan, place all the ingredients and boil over low heat for 30 minutes.

 Risotto : In a hot pan with olive oil, sauté the onion, apricot and cherry tomato. Add the arborio rice and stir until completely coated with oil.

 Deglaze the pan with sparkling wine. Slowly add the broth, stirring constantly. After five minutes of cooking, add the lentils. Continue adding broth until the rice is cooked. 

Turn off the pan and finish the risotto with the parmesan, butter, parsley and salt. Stir until the cheese is completely melted. Serve.
