Christmas fritters

 Christmas fritters are a delicious and tasty appetizer, ideal for our dinners or lunches during the holiday season. Who can resist salty , golden and fragrant fritters ? I really believe none. Adults and children will go crazy!


The batter is prepared with very few ingredients. Just mix flour, water, yeast in a bowl and you're done. All you need to do is leaven and finally fry... And the fritters are ready to be served!


They are also good in simplicity, perhaps to accompany a platter of cold cuts and cheeses, but at Christmas I always enrich them with broccoli , bacon cubes and olives . Three different proposals to satisfy everyone's tastes!




However, all the ingredients we prefer can be added to the basic batter . For example, broccoli can be replaced with other chopped vegetables, such as courgettes, mushrooms and artichokes, while bacon with salami or cooked ham. In short, the possible variations are endless.

Ingredients


1 kg flour 

1 l water

7 g dry brewer's yeast

(corresponds to one sachet)

10 g fine salt

( two teaspoons)

10 g sugar

(two teaspoons)

peanut oil to fry

150g  bacon diced (sweet or smoked)

200g  broccoli

blanched in salted water

150g black olives ,pitted 




Preparation



Put the flour, water, dry brewer's yeast, salt and sugar in a large bowl. Mix everything with a whisk until you get a thick, smooth, lump-free batter.


Divide the batter into three equal parts. Add the bacon cubes to the first, the pitted and sliced ​​olives to the second and the broccoli cut into florets and blanched in salted water to the last.

Mix the batters with a spoon until the ingredients are evenly distributed. Now cover the bowls with transparent film and let rise for an hour.


After the leavening hour, heat plenty of peanut oil in a large saucepan; the ideal temperature that the oil must reach is around 170 -180 degrees.


Take the batter by the spoonful and pour it into the hot oil. To do this, I recommend using 2 spoons, one to take the batter and another to push it into the oil.


Fry the fritters  until golden brown, turning them with a slotted spoon. It will take about 3-4 minutes. Once the pancakes are cooked, place them on absorbent paper to remove excess oil.



Here are the Christmas fritters  served on the table! Eat them still hot, perhaps accompanied by a good glass of red wine.
