Christmas escabeche

Preparing Christmas escabeche involves   simmering chicken in the vinegar sauce with the vegetables. Ingredients:


4 chicken breasts

1 onion

2 leeks

100 grams of dried figs

1 glass of port

1 bay leaf

1 glass of vinegar

1 cup olive oil

peppercorns

Salt to taste


Preparation

 One day before, soak the figs in the Port. In a saucepan, fry the finely chopped onion and leeks in olive oil, until they are transparent.

 Add the chicken breasts, the bay leaf, a few grains of pepper, the vinegar and the Port from the maceration. Cook over low heat until the breasts are tender.

 Add the drained figs, check the salt and cook for another five minutes.

Finally add the figs and continue cooking for another five minutes. Turn off the heat, let cool and reserve at least 24 hours in the fridge. Serve sliced ​​with its garnish vegetables and figs.

TIP: You can leave this very Christmassy dish up to fifteen days before eating it, as long as it is stored in the fridge properly packaged.
