Pineapple and coconut are the shining stars of this tropical-inspired Christmas cake. Ingredients
200 g (1/2 small can) condensed milk
50 ml sunflower or other neutral oil
190 g (3 slices) of pineapple in its juice
240 g flour
4 medium eggs
16 g baking powder
60 g of grated coconut
Preparation
Pre heat the oven at 180º
Crush the pineapple.
In a bowl, beat the eggs with the condensed milk.
Add the pineapple and oil and beat.
Incorporate the baking powder and sifted flour and beat.
Add the grated coconut and mix.
Pour the mixture into a 20 cm mold previously greased and with flour or lined with greaseproof paper.
Bake at 180º for 45-50 minutes.
Remove from the mode and let cool on a rack.
Pineapple and coconut will add a special and more exotic touch to this Christmas cake. In particular, the pineapple gives a moist texture to the cake that makes it unique. On the other hand, we can opt for a chocolate coating or a glaze with red berries that will give a more Christmas impression.
