Christmas vegetable casserole

This hearty casserole is filled with tender eggplant , zucchini and tomatoes coated in a tomato sauce flavored with herbs .It's the perfect addition to your holiday feast and is sure to keep you coming back for more.

Ingredients 

3-4 pieces of medium tomatoes

1 large zucchini

1 large eggplant

200 ml sugar-free tomato puree

3 cloves crushed garlic

fresh basil leaf

salt, pepper

1 onion , peeled 

apple cider vinegar


Preparation:

Preheat the oven to 180 degrees and grease a small heat-resistant bowl with olive oil.


Mix tomato puree, crushed garlic and fresh basil. Add a little apple cider vinegar, salt and pepper. If you want to make it spicy, you can also add chili flakes . 

Pour the finished sauce into the bottom of your baking tray.


Slice the tomatoes, zucchini, eggplant and onions into equal thick rings. Grab them vertically in a row. Sprinkle the vegetables with oil, salt a little and pepper them and they can go into the oven.

Bake for about 1 hour, until the tomato sauce bubbles at the bottom.


Serve with fresh basil.
