Christmas palascinta

 


These hungarian  Christmas crepes are a delicious and festive treat that can be served as breakfast, lunch, or dinner. These thin pancakes are filled with savory beef sauce and topped with bechamel sauce . They are perfect for a special occasion or a simple family meal.

Cooking time: 105 minutes 



Ingredients

For the pancakes:

 125 g of flour

 250 g of milk

 2 eggs

 butter and salt

For the sauce:

 250 g of lean beef or any other meat , minced or substitute with ground mushroom

 400 g  tomato sauce

 1 onion

 a glass of white wine or broth

 3 tablespoons broth stock

 2 sprigs of rosemary

 sage leaves

 bay leaf

 extra filter olive oil

 salt and pepper to taste


For the bechamel sauce:

 40 g of flour

 30 g butter

 a cup of milk

 salt and nutmeg

 grated parmesan cheese


Preparation

Preheat the oven to 200 ° C so that it is already hot by the time you prepare the pancakes .

Preparation of pancakes

Sift the flour into a bowl, then add the broken eggs, stir in the milk with a mixing spoon, always adding a little.

Grease a medium-sized pan with a little fat, and when the fat is hot, spread a ladle of dough evenly on the bottom of the pan. Cook one side of the pancake for a short time, then turn it over and bake the other side for a short time. When done, place on a warm plate. Make 20 pancakes.

Chop the onion, bay leaf and sage, then fry them in a tablespoon of hot oil.

Add the minced beef to the mixture soso that the aromas can be mixed with the meat. Salt, pepper and pour in the white wine.

When the wine has evaporated, add the tomato puree and a few tablespoons of stock, then cover and cook at low temperature for another 45-50 minutes.


Preparation of bechamel sauce:



Melt the butter in a thick-bottomed saucepan, add the flour and stir over high heat for two to three minutes.


Then slowly, with constant stirring, pour the hot milk over the toasted flour to avoid clumping the sauce. Keep the temperature low and cook the sauce for 10 minutes.

Add salt, pepper and also season with nutmeg.

Assemble the pancakes : cover a buttered baking sheet in a layer with the pancakes, add the meat sauce and roll them.

Close the whole of the dish with bechamel sauce, sprinkle with grated parmesan cheese and some butter  and bake for 10 minutes .Serve hot .


Bake the food in a hot oven for 20 minutes, then fry until golden and crispy for another 10 minutes.
