German style braised beef is one of the most perfect poultry dish for Christmas. You can serve this with red cabbage and noodles.Rice or pasta is less going with this. The other is braised red cabbage .
If you do not like to use mulled wine use grape juice .

1 kg roast beef
1 orange
500 ml mulled wine
3 cloves of garlic
Rosemary sprigs
2 red onions
2 tbsp corn starch
250 ml vegetable broth
4 cinnamon sticks

Preparation
For the roast. Halve the onions. Slice the oranges and remove the garlic cloves from their skins.
Prepare roast in a roasting pan.
Sear the roast beef on the grill at 250 degrees for 1 minute on each side. Preheat the oven to 80-100 degrees with a fan.
Put the roast beef in the roaster and pour the mulled wine over it. Add onions / garlic / oranges / cinnamon sticks / rosemary sprigs. With the help of thermometers, let the roast cook in the oven at 80-100 degrees for about 3 hours.
For a medium condition, which is how I chose it, the roast needs a core temperature of 60-65 degrees.
When the roast is ready, take it out of the oven and let it sit for about 10 minutes before cutting it.
You can now also prepare the sauce. To do this, simmer the vegetable stock with the juice from the roaster. Add the starch and let it steep. Pass through a sieve .
Serve it with red cabbage and dumplings.
