Christmas rice

 


This festive dish is a staple of holiday tables in many countries. It's made with rice, spices, and often dried fruit and nuts, and can be served as a side dish or a main.

Rice is best when add turmeric but you can also add saffron if you do not have.

Preparation time ; 30 minutes

Ingredients


320 g aromatic basmati rice

60 g olive oil

4 cinnamon sticks

20 g ginger, chopped

4  cardamom, grated

4 bay leaves

660 ml vegetable broth

5 g turmeric or saffron

5 g curry powder

salt


Dried fruit and nuts 

50 g dried dates, in small pieces 

50 g dried cranberries or large raisins , cut into small pieces

40 g raisins, cut into small pieces

60 g pine nuts or almonds , roasted

60 g peanuts or pecan, cut into small pieces

100 g pomegranate

40 g fresh onion

10 g lime juice

1 g lime zest 

salt


Preparation


Heat a saucepan over medium to high heat and add the olive oil, rice and spices and sauté for 2-3 minutes.

 Add the vegetable broth, stir and increase the heat. Once it boils, lower the heat and cover our pot with a lid.

Mix the dried fruits ,nuts ,salt ,lime juice onion in a bowl.

 Once the rice is cooked, remove from the heat, remove the lid and after the temperature drops a little, add the mixture of nuts and dried fruits.
