Christmas onepot chicken

 

For a night out there is nothing like showing off by bringing to the table a dish with the best of Mexican cuisine.

This is a no oven chicken pot recipe specially for christmas eve or christmas .Use non spicy red pepper if you do not like hot dishes or making for kids.




Preparation time ;1 hr 30 mins


 Ingredients

For the sauce

50 g of dry chipotle chili, cleaned, ginned and roasted

100 g of ancho chili peppers cleaned, ginned and roasted

1 onion roughly sliced ​​and roasted

1 slice of 5 cm cinnamon

1/2 k of tomato puree

3 cloves of garlic 

4  peppers

*** use non spicy pepper if you want non hot chicken 


For the chicken

2 tablespoons olive oil

4 bay leaves 

1 chicken in pieces

2 bay leaves

Pepper to taste 

Sea salt

For the decoration

50 g of peeled and golden almonds

50 g pine nuts 

50 g of walnut 


 Instructions

In a saucepan of  medium size cook chili peppers, cinnamon , peppers, garlic,onion and tomato.

Once cooked, grind to a smooth consistency, strain and keep in reserve.

 Meanwhile, brown the chicken in two tablespoons of olive oil and when it is well browned add the  bay leaf and the sauce you have in reserve.

Season with sea salt and black pepper.

Cover the container and simmer until the chicken is cooked.

Assembly Serve hot. Garnish with nuts.
