It was while tasting a Christmas jam at my father's that I had the click. It must be said that this concentrate of dried fruits and cinnamon goes just as well with a slice of brioche with foie gras.
So to change the bredele amaretti and almond-cinnamon stars , this year I wanted to try a homemade Christmas jam. While some versions may be too sweet, my recipe incorporates little sugar, for a result that is half jam, half compote. Let's go !
For 5 jars
Ingredients
2 oranges
1 lemon
1 kg of pears
500 g of apples
200 g of dried figs
200 g of soft dried apricots
100 g of pitted prunes
125 g of raisins
125 g walnuts
125 g almonds
3 teaspoons of cinnamon
450 g brown sugar
Preparation
To make the recipe, wash the citrus fruits. Collect their zest that cut into small pieces, then squeeze their juice. Set aside for later.
Now wash the apples and pears , peel them and cut them into small pieces.
Cook them in a large container with a little water and cinnamon. Once the fruits are softened after about 15min, 2 possibilities according to your taste: either you mix the fruits to obtain a compote, or you keep the pieces.
Take the prunes, figs and apricots and cut them into pieces. Pour them into a bowl and add the raisins. Sprinkle them with the juice of the citrus fruits and add the zest. Mix and let macerate for a few moments or a few hours if you have a little time in front of you.
During this time , boil your jars to sterilize them and wipe them with a dry and clean cloth. Then chop the nuts and almonds roughly.
Now proceed to cooking the Christmas jam. In a large saucepan, pour the macerated dried fruits, the apple-pear mixture and the sugar.
Cook for about 10 minutes. Stir from time to time to prevent the jam from sticking to the pan. Then add the almonds and walnuts and cook for a few more minutes.
All you have to do is put in a pot! With a large spoon or a ladle, pour the jam into the jars and close them immediately. Turn them over until completely cool, for better conservation.
And now there's more to taste! On a slice of good bread, brioche or on a pancake, this Christmas jam will delight lovers of dried fruits, citrus fruits and cinnamon.
