Tomatoes and olive oil serve as the base, which is then refined with onions and spices. Chili, tabasco and paprika powder give the sauce a touch of spiciness, while honey, star anise, cinnamon and allspice add a Christmas touch. The result is a fruity sauce that goes perfectly with poultry.
To marinate, put the meat in a large bowl (alternatively: zip bag), add the sauce and cover it completely. Cover the bowl well with cling film and place in the refrigerator for a few hours so that the meat can absorb the taste of the sauce.

Ingredients
1 large onion
2 tbsp olive oil
2 Garlic cloves
1 Chili pepper
2 tbsp Tabasco sauce
300 g tomatoes
Paprika powder or chili powder
1 Star anise
1 teaspoon cinnamon
1 pimento, roasted red pepper
1 tbsp vinegar
12 tbsp honey
Salt pepper
Preparation
Finely chop the onion and the garlic. Put both in a saucepan and cook. Then add the tomatoes to the pot and continue cooking .
Season with the spices and remaining ingredients and simmer for 10 minutes, then puree finely.
