Christmas rice


 


This dish is a infamous  Christmas dish . It is made with rice, ground meat, and vegetables, and is often served with a sweet and sour sauce.


preparation time ; 30 minutes

Ingredients 

1 1/2 cups  of   basmati rice 

2 cubes of chicken broth

½  cup of olive oil 

200 gr. minced meat or diced  bacon or leftover meat 

1 chopped onion 

1/3 cup  of apple cider 

1 tbsp.  cinnamon powder

1/3 tbsp. clove powder

1/4 tbsp. nutmeg  powder

½ cup of  roasted almonds 

1  handful of black currants

1 handful  of  raisins 

1  hanful of dried cranberries 

1  handful of roasted cashew 

3/4 handful  pistachios 

1/3  handful of roasted pine nuts 

Some parsley leaves 

1/3 cup of of pomegranate seeds 

Salt 

Pepper


Preparation 

Boil the rice  according to the packaging instructions, after adding the chicken broth cubes to the water.

 Test if extra salt is needed. Remove from the heat, cover the pot with a clean towel and set aside .


In a large deep frying pan or low saucepan, heat the olive oil, add the minced meat, onion, salt and pepper and cook, stirring occasionally, until the minced meat is golden brown. Add the cinnamon, cloves and nutmeg, stir and simmer with a little cider .

 Add the cranberries, raisins, the rest of the cider and continue cooking for a few more minutes, until the flavors are mixed and the liquids evaporate. At the end add all the nuts. Mix well and remove the pan from the heat.

 

Pour the minced meat mixture into the rice, mix well to mix the ingredients, and place it in a form, or on a serving tray or in a deep bowl. 

Garnish with parsley and pomegranate and serve .
