Serves ; 6

Ingredients

 800 grams of firm tofu

 1 teaspoon salt

 ½ teaspoon of garlic powder

 ½ teaspoon of onion  powder

 1 tablespoon of olive oil

 ½ cup chopped celery

 1½ cups of mushrooms,  chopped

½ cup of carrot , chopped

2 tablespoons of sesame oil

2 tablespoons tamari or soy sauce

1 tablespoon of miso paste or vegetable seasoning

1 tablespoon lemon juice

½ tablespoon of agave or honey

½ tablespoon of dijon mustard

 1 slice of crushed bread

 ½ tablespoon of ginger

 1 teaspoon dried rosemary

 1 teaspoon dried thyme

 salt

tablespoon of sesame oil

2 tablespoons tamari or soy sauce

Preparation

Start your vegan Christmas turkey by grinding the tofu in a processor or blender until it becomes a paste.

Season the tofu with the salt, garlic powder and onion powder. Place the tofu dough in a sieve lined with kitchen towel or a dish towel and fold the fabric over the tofu. Put a weight on top and take it to the refrigerator for at least 2 hours (I leave it overnight).

In a pan heat the oil and sauté the celery together with the mushrooms, carrots and ginger. Sauté for 5 or 6 minutes, until these vegetables wither.

Then add the herbs (thyme and rosemary), salt, pepper and 2 tablespoons of tamari. Sauté for another 3 minutes , until the mixture is dry, then add the crushed bread. Stir well and set aside.

In a separate bowl we will make the sauce : mix the sesame oil with 2 tablespoons of tamari, the lemon juice, the agave, the mustard and the miso. Reserve.

With the help of a film paper, open the tofu dough in a rectangular shape.Brush part of the sauce to season.Don't make the tofu layer too thin, as it will be difficult to close afterwards.

Carefully place the filling in the middle of the tofu dough, leaving space to close, as in the photo.

Very gently close the film paper , joining the parts of the tofu dough that were left without filling - use the film paper to help you shape everything into the shape of a cylinder. Then leave it in the freezer for 2 hours to keep the shape of this Christmas vegan turkey.

After the indicated time, brush the sauce over your vegan turkey and cover it with aluminum foil. Bake in a preheated oven at 200ºC for 1 hour. Remove the foil, brush more sauce on top and return to the oven for another hour.

Remove your stuffed Tofu "turkey" from the oven and let it rest for 15 minutes.
