christmas turkey cutlets

 


This delicious christmas turkey dish is full of the aroma and flavor of fruity sauce .You can make that dish without oven in the stovetop in a less time .You can garnish the meat with promegrante and thyme .Best to serve with mashed potatoes or yellow rice . Do not forget to accompany with a glass of white wine .

Ingredients

800 g turkey cutlets

1 onion

2 pears

2 prunes

2 dates

2 dried apricots

1 tbsp shelled hazelnuts

1 tbsp cognac or orange juice

1 pinch mixed spices ( ginger , cardamom , cloves and cinamon )

200 ml  white wine or chicken broth

1 tbsp white balsamic vinegar

1 tbsp flour

3 tbsp cork syrup

2 sprigs thyme

1 bay leaf

1 tbsp dried canberries  or raisins


Preparation

Soak the apricots and prunes in the cognac with a little water to cover the fruits.

Mince the onion and peel the pears. Cut the pears into small cubes.

Sweat the onions then add the pears. Drain the prunes and apricots (keeping the maceration juice), cut them into small pieces as well as the dates. Add them to the pears mixture. Filter the maceration juice and add it too. Add a pinch of spices, salt and pepper, mix.

When the fruits are well melted and all the liquid has evaporated, add the hazelnuts to toast them quickly for a few moments, without stopping turning. Stop cooking and let cool.

Flatten the turkey cutlets well, salt them lightly. Stuff the inside with a large knob of fruit puree. Roll the cutlets on themselves and close them with kitchen wire to make paupiettes.

Heat 2 tbsp of oil in a large casserole dish and brown the meat rolls on all their faces. Season with salt and pepper and pour in the white wine. Add the thyme and bay leaf. Lower the heat and cook, covered, for half an hour.

Take the meat out of the casserole dish. Add the flour previously diluted in a little water, the syrup, the vinegar and the cranberries. Taste and adjust if necessary in salt and pepper.

Cook rolls  back in the sauce for about ten minutes.
