Christmas tuna pasta

 

Christmas eve is a meat free day but not vegetarian .This condition helps to orgin of many tasty seafood dishes .This  is one of them .Easy to prepare dish, typical of the Liguria in Italy , good  to be served on the table for the Christmas holidays, perhaps for the Christmas Eve dinner . This pasta is a one pot christmas dish and full of meditterean flavors .Specially people who do not eat meat on Christmas eve can enjoy these well .

Cooking time ; 30 minutes


Ingredients

500 grams spaghetti

200 grams tuna fish

600 grams tomato puree

50 g anchovies in oil

to taste parsley

to taste pepper

to taste chilli powder

to taste salt

2 cloves garlic

5 tbsp  olive oil


Preparation

 Finely chop the garlic and fry it with 4 tablespoons of oil in a large and low saucepan: Add 2 tablespoons of chopped parsley and anchovies , dissolving them on low heat with a wooden spoon. When the anchovies have dissolved, add the tomato purée and half a glass of water.

 Cook the sauce over high heat, stirring often. As it dries, add a ladle of hot water and let it evaporate, always over high heat. After 20 minutes of cooking, add the tuna drained from the oil and crumbled, season with salt and pepper and sprinkle with chopped fresh parsley and a pinch of chilli.

 Cook the pasta in plenty of boiling salted water, drain when al dente, transfer them to the saucepan and mix them gently, adding a dash of  oil. Transfer the pasta to a hot bowl and serve to the table.
