Christmas savoury crepes

 

Holiday  red crepes  are filled  with turkey stuffing and topped with ricotta and pesto sauce . Nothing is good for christmas breakfast or a appetizer than this nice crepes .


preparation time ; 30 minutes 

serves ; 4


Ingredients

crepes 

1 cup of milk

3 eggs

1 tablespoon of oil

1 cup  of wheat flour

1 tablespoon of salt

1⁄2 cup grated beets


filling 


3 tablespoons of olive oil

1 chopped onion

2 chopped garlic cloves

1 stalk of chopped leeks

1 grated carrot

1⁄2 cup of tomato sauce

2 cups shredded turkey

Chopped chives 

Salt to taste


pesto 


2 cups of arugula or spinach

1⁄2 cup of olive oil

1⁄2 cup of nuts 

1⁄2 cup grated parmesan

1 clove of garlic



1 cup of ricotta cheese


Preparation 

crepes 

Mix all ingredients in a blender. Make the crepes in a nonstick skillet and set aside .

stuffing 

In a pan, sauté the onion and garlic in olive oil, add the turkey , vegetables and sauté until it is cooked, add the tomato sauce and stir well, season with  chives and salt. Let cool.


pesto 

Beat all the ingredients in a blender until it forms a homogeneous sauce.


Place the crepes, the spreading filling, roll the pancakes and place on a platter. Put the pesto sauce and ricotta  on top and serve.
