A healthy swedish style holiday bread with rye flour . This is very healthy as Rye is packed with magnesium, which helps control blood pressure and optimize heart health. Its high levels of soluble fibre can also reduce cholesterol.
We use beet syrup which is also healthy in this .If you cannot find i will also give the recipe .
For 2 loaf tins, each 24 cm long
ingredients
400 g rye flour
100 g beet syrup
75 g butter
75 g fresh yeast or 25 g dry yeast
1 tbsp ground cloves or anise powder
1 tbsp ground cardamom powder
1 tbsp ground fennel seeds
550 g wheat flour
50 g dried figs or dates
75 g raisins

Grease and flour the loaf tins. Put the rye flour in a large bowl. Heat 1/2 liter of water, syrup and butter in a saucepan and pour over the rye flour.
First work with the dough hook of the hand mixer, then with your hands into a smooth dough.
Crumble and dissolve the yeast in 100 ml of lukewarm water. Knead the dissolved yeast, the spices and the wheat flour into the rye dough.
Roughly chop the figs and knead into the dough with the raisins. Shape the dough into 2 long loaves of bread, place them in the prepared box tins and cover with a kitchen towel and let rise in a warm place for 1 hour.
Preheat the oven to 190 ° C top / bottom heat. Prick the surface of the bread several times with a fork and brush the bread with a little lukewarm water.
Place the loaf tins in the preheated oven (middle rack) and bake the bread for about 50 to 60 minutes (do a stick test!). Brush the finished bread with a little water again immediately after baking.
Let cool down slightly, then remove from the molds and let cool completely on a rack.
Beet syrup
1 cup fresh beet juice
1/2 cup refined or cane sugar
Juice freshly washed and chopped red beetroots. If using a high-powered blender, Strain any remaining pulp to create a smooth liquid.
Over medium heat, combine sugar and beet juice. Stir until sugar is blended well.
Bring the ingredients to a boil and then remove from heat. Let sit at room temperature for at least 20 minutes.
