Christmas roll cake

 If you are not interesting  of  eating normal yule logs this is the perfect log to make for Christmas .This christmas log is  a rolled version of Japanese Christmas cake which is made with cream and strawberries . 

This strwaberry fillled cake is a nice alternative to Christmas fruit cake and also the chocolate yule log .




Baking time ; 15 minutes 

Toatl time ; 60 minutes


Ingredients

cake

4 egg whites

1/2 teaspoon lemon juice 

 75g sugar

20g  salad oil  or another neutral oil

1/2 tsp of vanilla extract

40ml milk 

80 g cake flour 

1/3 teaspoon Baking powder 


cream

100ml fresh cream 

sugar 1 tablespoon

1 tsp Kirschwasser  or vanilla extract


50 g berry jam

 6 medium Strawberries

decoration

2 medium strawberries

icing sugar 


Preparation

Divide the sugar into 50g and 25g. Mix egg whites, lemon juice and sugar (1/4 of 50g) in a bowl and whisk. When the horns stand, add the remaining sugar in several batches to make a solid meringue.

Put  oil and sugar (25g) in another bowl and mix well.

Add vanilla extract to it and mix, then add milk little by little and mix well.

Add 1/3 of meringue to oil mixture  and mix evenly.

Add sifted flour to it and mix slowly.

Add the remaining meringue  in two portions and mix slowly .

Pour into a double tray  (24 x 28 cm) and bake in a perheated oven (150 ° C for about 15 minutes). After baking, remove the paper and let it cool.

 Put cream in a bowl and beat with sugar and vanilla extract or kirschwasser.

Spread the jam, apply the jam and cream, and place strawberries . Roll it tightly .

Decorate with strawberries and more sugar .
