Christmas kutia


Kutia is a must-have Christmas dish that Russians used to cook for Christmas, for Epiphany. Kutia is the main dish on the table on Christmas Eve in Russia. With the appearance of the first star in the sky, godchildren carried kutya to their godchildren, carried them to their grandparents, and at the same time wished health, prosperity and happiness. Initially, kutia was prepared only from wheat or barley . 

This is a rice kutia to make as a dessert or a breakfast idea  on christmas.  It is a gluten free , healthy , vegetarian  christmas breakfat idea .



Serves ; 4

Cooking time ; 50minutes


Ingredients

2 cups  orange juice

1 cups rice

1tbsp honey  or about 2 tbsp brown sugar

2tbsp raisins

4 tbsp nuts 

2tbsp dried apricots or dates

salt


Instructions


Rinse the rice several times in cold water until the water is almost clear. It is by washing the rice.

 It is better to use a saucepan with a thick bottom, pour rice into it and pour in orange juice (without pulp) so that the juice rises above the rice at a level of 1.5 cm .Add salt to taste and cook until cooked under a closed lid and is not  not raw.

 Turn off the heat and let stand for about 10 minutes. Then add honey, stir the rice.

Rinse raisins and dried apricots and pour over with boiling water. Chop dried apricots. Pour raisins with hot water and let stand for 30 minutes, . Add nuts, dried apricots and raisins to the rice, mix.

Decorate the Christmas kutya with dried apricot slices and almonds.
