Perhaps put in the fridge between each layer of ice to prevent the ice from melting.

Ingredients
200 g chocolate
60 g icing sugar
250 ml of fresh cream
100 g flaked almonds
250 ml of coffee ice cream
250 ml of coconut ice cream
250 ml of vanilla ice cream
100 g butter
Preparation
Melt the chocolate and butter in a double boiler.
Once everything is well melted, mix to obtain a very homogeneous mixture.
Whip the crème fraîche, then add it to the previous mixture.
Mix well until everything is completely cold.
Pour 1/3 of this preparation at the bottom of a cake tin, then in the freezer, until it hardens.
Then add layers of ice, alternating, then the rest of the chocolate preparation.
Let it freeze for at least three hours.
Meanwhile, mix the icing sugar and almonds in a frying pan and toast all this over low heat, stirring occasionally.
Once the almonds are coated in caramel and golden, remove the pan from the heat and let it cool.
Take the log out of the freezer, unmold it and sprinkle it with almonds on its top.
Put the frozen log back in the fridge for about 15 minutes before serving.
