The fruit cake or fruit cake is a delicious dessert typical of the Christmas season that consists of a sponge cake with dried fruits and a variety of raisins. This is very different from traditional fruit cake .It is only soak for 20 minutes .A rich option that you cannot miss.

Ingredients
100 g of dates
100 g candied orange peel
100 g of candied lemon peel
100 g raisins
1 cup of cherries in syrup
1 ½ cup pineapple juice
1 cup of honey or sugar
2 teaspoon ground cinnamon
2 pinches of ground cloves
30g butter
1 cup of refined sugar
20 ml of cognac or brandy
4 eggs
4 ½ cups of flour
½ teaspoon fine salt
2 teaspoons of baking powder
1 cup of walnut , halved and chopped
½ teaspoon ground nutmeg
Preparation
You must chop all the fruits and put them in a bowl. Cover the fruits with the honey, pineapple juice, brandy, cinnamon, cloves, and nutmeg. Mix the ingredients well and let it rest for 20 minutes.
Meanwhile, in a separate bowl and with the help of the hand mixer, beat the butter for 5 minutes, incorporate the sugar and beat very well until it is sour. Add the eggs alternating with the strained flour, along with the baking powder and salt.
Add the fruits and the juice where they were soaked, and then integrate them with the help of a spatula. Finally, the walnut and cherries are added and they are incorporated very well.
Pour the batter into one or more rectangular molds, previously buttered and floured.
Bake over medium heat for 30 to 40 minutes, depending on the size of the pan or until a toothpick inserted in the center comes out clean.
