Christmas citrus log

 





This citrus cream filled yule  log is a very different Christmas cake .It has no chocolate or no cream .This cake has filled and decorated with a lemon , lime and orange pastry cream .

Ingredients 

Cream

70 g flour

150 g sugar

1 orange

1 lemon

1 lime

6 egg yolks

500 m l of milk

Cake

125 g sugar

125 g flour

5 egg whites

5 egg yolks


Preparation


Prepare the cake

Beat the egg whites until stiff. Combine the yolks, sugar and flour. Bake the cookie at 180 ° C for about 10 min. Once cooked, roll it in a damp cloth.

For the fruit cream

Take the zest from the fruit and blanch them at least once (start in cold water and bring to the boil then rinse them). Put all the other ingredients in a pot  and cook until it became a cream .

When the cream is ready, remove it from heat and sieve and let it cool .

Assemble the log

Spread half of the cream on the cake and roll it up.

Distribute the rest of the cream on the log and keep it in the fridge for at least 1 hour
