Cartellate is a round shaped fritter type of Italian orgin .It is glaze with honey and garnished with sprinkles , sugar and nuts .You can use melted sugar if you do not like honey .The dough is typical to many western european fritters and made using wine and oil .
Traditionally they cut dough with a pasta cutter , so that they looks nice .But also you can use a knife to cut them.

Ingredients
500 grams of flour
100 ml dry white wine
500 grams honey
1 untreated lemon
50 grams of walnut kernels
cinnamon powder
120 ml extra virgin olive oil
oil to fry
salt
Preparation
Sift the flour into a bowl, add 1 pinch of salt and pour in the wine and extra virgin olive oil, mix until the dough is firm and homogeneous. Wrap it in plastic wrap and let it rest for 30 minutes.
Divide it into blocks, roll it out into rectangular sheets that are not too thin and make many strips 3 cm long and wide. Fold them in half, pinching them with your fingers at intervals of 3-4 cm and shape them in a spiral; pinch the edges of the strips of dough again to join them together to obtain a round .
Fry the cartellate in hot oil, turn them on both sides until golden; drain them on kitchen paper. Heat the honey in a saucepan, dip it one bag at a time, turn it over on both sides and drain it on a wire rack. Continue until you finish cartellates and serve it plain or sprinkled with cinnamon, chopped walnut kernels and grated lemon zest.
