These canapes are ideal for a starter for a Christmas party . They are full of holiday colours and vegetarian, if you like add vegan mozzarella and make it vegan .
This can be made even using the sandwiches bread cut into squares.

Ingredients
1 thin baguette
Mozzarella cheese
Roasted red peppers cut into strips
1 cup of pesto
salt and pepper
Parsley to garnish
Preparation
Cut the baguette into very thin slices and toast one side on the grill or pan and cook until toasted.
To assemble the canapé, put the following ingredients on the non-toasted side.
Place a piece of mozzarella on the bread. Then we put a piece of red pepper and on top of this a teaspoon of pesto. Season with salt and pepper
Place on the grill or pan and grill until the cheese starts to bubble .
Take out and garnish with parsley.
