Christmas broth

 This christmas broth recipe is an festive version of traditonal broth  served with meatballsand rustic pizza .It is of Italian orgin.

The broth is generally prepared with  chicken meat  (but mixed meats, turkey or capon, veal can also be used),  vegetables and boiled for about two hours. Once cooked, the broth should be left to cool, so that the excess fat will float  and can be removed with a skimmer.



Servings ; 6 -8

Broth

Ingredients 

1 chicken  ( you can add a little turkey meat and a little veal)

1 onion

1 celery

1 carrot

1 fennel , use potato if you cannot find

1 cinnamon stick


Preparation 

The chicken  must  be thoroughly cleaned , using only the softer parts , cut into cubes and then boil in water   with vegetables for about 2 hours. 


Rustic pizza 

6 eggs

2 tablespoons of grated cheese

6 tablespoons of flour


Mix everything and spread in a  pan.Then bake in 180 c until golden brown.


Meatballs 


300 g of minced meat

50 g of grated cheese

1 egg

salt to taste


Finally, the little balls are prepared with  meat , grated cheese and 1 egg . After mixing all the ingredients, the preparation is salted and small balls like chickpeas are formed. They are then cooked in a little of  boiling  broth , drain and set aside.


Once all the elements are ready, which can also be prepared a couple of days before, on  the morning of the christmas eve the Christmas broth is heated and add  the meatballs, and a stick of cinnamon. 

Serve with rustic pizza.
