Brazilian Christmas rice


The Christmas Rice  with the textures with the crunchy touch that the vegetables and the nuts give, as well as combining sweet and salty flavors. This rice is typical to Brazil . Christmas is grandly celebrated in Brazil .They have nice christmas dishes different from America and Europe .That rice is one of them .

The speciality is adding champagne ,but it is not a matter to deal with science .It is a matter of preparing white rice as usual but adding champagne and nuts. And the result is a fantastic side dish for Christmas dishes, like this turkey .







Servings ;4-6 

Ingredients

3 tablespoons of butter

1 clove of garlic finely chopped

1 small onion finely chopped

2 cups long-grain rice well washed and drained

Salt and black pepper to taste

2 1/2 cups of boiling water

1 1/2 cup of champagne

1 cup raisins

150 g of walnuts and almond

1 cup of  dried apricots or dates

Chopped parsley (optional)


Preparation


In a saucepan, melt the butter over medium heat to sauté the garlic and onion.

When the onion is transparent, add the rice and mix it with the garlic and onion. Fry it for two minutes.

Pour the boiling water into the pot, season with salt and pepper and cook. When the water comes to boil, cover and reduce heat.

Ten minutes later, add the champagne and raisins. Mix, cover and cook until the water is almost completely absorbed.

Remove from heat and leave the pot covered for 10 more minutes.

Toast the almonds and walnuts in a pan and season with salt.

Add the almonds, walnuts and  dried apricots to the rice and integrate them to the rice with a fork. Serve with parsley (optional).
