Norwegian Christmas cake

 

This "cake" is more like a bread with lots of fruit in it.

It is juicy and tasty and you do not need anything more than maybe a little butter and brown cheese.

Christmas cake or Christmas bread. Dear child has many names. You bake it easily yourself. It can be enjoyed for breakfast with good butter or with toppings. And of course for the coffee.

Ingredients

250 g butter 

1 kg wheat flour 

125 g sugar 

0.25 ts salt 

2 tsp ground cardamom 

50 g yeast 

600 ml milk 

250 g raisins 

200 g  more sugar 

1  egg for brushing

Approach

Cut butter into cubes and place it on the kitchen counter so that it reaches room temperature and becomes soft. 

Put the flour in a baking dish, mix in sugar, salt and cardamom and crumble in the yeast. Add milk and work the dough until it is shiny and pliable, and releases the bowl. 

Then knead in the room temperature butter. Finally mix in the raisins and sugar . Raise the dough under plastic in a warm place until it is twice as big (approx. 40 minutes).


Take the dough on the baking table and divide it in half. Roll up and knead them into two large, round buns. Using a sharp knife, cut around the edge and press the cakes firmly down the middle. In this way, the Christmas cakes do not crack so easily and they get a nice shape. Set them to rise under plastic in a warm place, approx. 30 minutes. Whisk together the egg and brush the cakes.

 Bake the Christmas cakes in the bottom of the oven at 200 ° C for 35-40 minutes until they are cooked through. Cool on a wire rack. 


Tip:

If you want a different shape for the Christmas cakes, you can, for example, bake them in greased loaf pans.
