Homemade real mayonnaise 


One Egg  (at room temperature)

Salt

4 g

Vinegar or lemon juice (at room temperature)

10 g

Vegetable, olive or mixed oil (at room temperature)

200 ml


Although we are going to prepare the sauce in the glass of the hand mixer, we start by breaking the egg in a separate container. This helps us to check if there is any shell residue  .


Transfer the egg to the glass of the mixer and add the salt, vinegar (or lemon juice) and half of the oil. We place the mixer arm inside, touching the base, and we begin to beat at low power. We do not move the mixer until the mixture is emulsified , then (only then) we incorporate the rest of the oil and lift while continuing to beat until obtaining the desired thickness




Homemade mayonnaise without egg

1 glass of oil (olive or sunflower, to your liking)

1/2 glass of milk That is, half of oil

Salt

A splash of lemon or vinegar


1.- To prepare our homemade mayonnaise without eggs, in a beaten glass we put the milk first. And on top we add the oil, without removing both ingredients so that it does not cut



2.- Carefully, we introduce a mixer to the bottom and give it a shank. We leave it at the bottom for about 10 seconds. Until we hear the sound change


3.- Now slowly, we are gradually raising the mixer, without stopping at full power at any time. The homemade egg-free mayonnaise will gradually emulsify.



4.- We will see that the mixture begins to thicken. At this point, we raise the mixer without fear, up and down. Until it finishes thickening.


5.- Add a pinch of salt and a splash of vinegar or lemon. We mix it well and we already have it ready



** you can use coconut ,almond ,oat or rice milk to make this mayo vegan.



Mayonnaise with Yogurt:


- 175 grams of low-calorie natural yogurt

- 5 tablespoons of virgin olive oil

- A teaspoon of lemon juice

- A teaspoon of mustard

- A pinch of salt

- Ground black pepper


This recipe for making mayonnaise with yogurt is ideal for people who cannot or do not want to take eggs, and although there are other ways to make mayonnaise without this ingredient, this variant is interesting for its simplicity of preparation and for its result. We will begin to prepare this mayonnaise recipe by pouring the yogurt in a glass for the mixer, to be able to beat later.


We use low-fat skimmed natural yogurt so that our mayonnaise doesn't have too many calories, but you can use any type of natural yogurt. We also add a teaspoon of mustard, the freshly squeezed lemon juice, a pinch of ground black pepper and another of salt to the blender glass. Now we are going to put the mixer in the glass to beat everything and make a homogeneous mixture of those ingredients.
