Christmas roasted chicken

 

Delicious chicken to enjoy with the family at Christmas.These roasted chicken recipe is aromatic and delicious .We place chicken over a bed of vegetables and oranges. The recipe calls to use sweet potatoes , but you can use normal potatoes if you do not like sweet potatoes .

Garnish with lettuce and  enjoy it  .

2 chickens  of 1 1/2 kg

2 sour oranges

1 head Garlic

1 tsp cumin

1/4 tsp ground white pepper

1/4 tsp black pepper

1/2 tsp oregano

1/2 tsp thyme

2 tbsp Butter

2 large onions

to taste Salt

2 tbsp oil

4 carrots

2 sweet potatoes

lettuce


Preparation 


Clean the  chicken and dry it well

Insert the knife under the skin and lift it up being careful not to separate it completely. Once the leather or skin is lifted, make several cuts in the chicken that will allow the interior of the meat to be marinated. This allows the inside of the chicken to be marinated for a better flavor when cooked.

Prepare the marinade: crush the garlic and onion first and then add the rest of the ingredients. Combine them well until a kind of pasta is made

Using your hands, marinate the chicken by introducing the marinade into all cuts and over the rest of the chicken. Store in the refrigerator covered with aluminum foil or cling film to give it time to absorb the seasonings, if it is from one day to the next better

Place sliced ​​carrots and sweet potatoes in the same way on the oven tray until the entire bottom of the tray is covered, place the chickens on these and spread butter to the surface of them

Preheat the oven to 350 ° F. In total you should cook for about 1 hour. I recommend you cook it covered with aluminum for the first 25 - 30 minutes and uncover it for the remaining time so that it takes color and browns.

 If you want it to be more golden, then check it and keep it in the oven until you think it has the ideal point, to check if it is cooked, prick it with a fork under the wing, and it should release transparent liquid.

Once the cooking is finished, you can garnish it with some lettuce leaves and you can accompany the chicken, with white rice, salad and a good wine.
