Christmas Potato Salad



The perfect accompaniment to your next family reunion with a latin twist.It is different from german potatoes salad .

Ingredients

1 1/2 cup of  Evaporated Milk

2/3 cup vegetable oil

3 tablespoons pineapple juice

Salt and pepper to taste

2 liters of water

3 pounds potatoes skinned and diced

1 cube of  Chicken broth 

1 cup diced carrots

1 cup of pineapple cut into cubes

1 cup green peas

1 pound of leg ham

Instructions

Dressing

In a blender, place the  Evaporated Milk, the oil, the pineapple juice, salt and pepper to taste and process at maximum speed for 30 seconds.


In a large saucepan over high heat, place the water, potatoes,  Chicken broth cube and cook for 20 minutes. Add the carrots and cook 10 more minutes or until soft. Remove from the water, drain and cool to room temperature.


In a bowl, combine the potatoes, carrots, pineapple, peas, and ham.


Add the dressing and mix gently until well integrated. Serve and enjoy
