Christmas kabsa

 Christmas Kabsa 




“Arabic rice” or “Kabsa” is very popular dish originated in Arab pennsylvania  but is made and eaten all over the  world. 

This rice is perfect for christmas as its festive flavor of meat and spices.

Use your favorite meat (turkey ,chicken or beef) to make this .





Serves ;4 




Ingredients :




Kabsa powder 




 Coriander


fennel ,if have


cumin


Anise , if have 


Black pepper


 cinnamon


ginger


Cardamom


Nutmeg


*** if you have arabic spice mix no need to make at home


 stock:


 4 chicken bone in pieces 


3 bay leaves


4 celery stalks


1 white onion


 2 cinnamon sticks






3 cups of basmati rice


1 small white onions( diced)


200 g chicken , beef or turkey ( diced in small bite pieces)


1 tsp turmeric or saffron 


1/2  of toasted pine nuts and sliced almond.


Handful of chopped parsley for garnish.




Directions






Toast all dry spices and ground into a powder You need only 1 tbsp of it.




Chicken stock: simply roughly chop all the celery and onions in large chunks and in large pot add chicken, celery, onions, cinnamon, bay leaves, add 5 cups of water and season slightly with salt. boil the chicken for 35-40 minutes.




For the rice :




Simply soak the rice with cold water between 5-10 minutes. and wash and rinse until it run clear.




Dice the small onion.




Begin by heating oil cook the onions for 5 minutes on medium heat until fragrant and slightly golden.




Add the diced meat   and cook for about 10 minute until the beef it well cooked. Add in washed rice and follow by 3 cup of homemade chicken stock.Season with 1 tbsp of the arabic  mix and turmeric or saffron . 




Lower the heat, cover an cook the rice for 10 minutes until all water dries. Turn off the heat and set aside for 5 minutes.




In the meantime take left over chicken from stocj  and  shred the   into small pieces.Garnish  rice with nuts and shredded chicken
