Christmas fried chicken


 Christmas is a time for family, friends, and food. And what's a Christmas dinner without fried chicken? This recipe for Christmas fried chicken is easy to follow and will result in a delicious and crispy fried chicken that will be the perfect addition to your Christmas table.

Chicken thighs or drumsticks 8

Eggs 2

Lemons 2

Pistachios or walnuts  40 g

Parsley 1 sprig

Breadcrumbs

Cooking oil 

Salt to taste



First wash an untreated lemon under the tap with a brush.

With the potato peeler cut the peel into very thin strips without the white (bitter) part

Clean the chicken thighs and then with a sharp knife nick them in correspondence of the most fleshy parts.

Prepare the marinade: squeeze the juice of a lemon, pour it into a bowl and mix it with the olive oil, a pinch of fine salt, a few leaves of rosemary and beat everything with the tines of a fork.

Put the chicken thighs  in the marinade, turn them once or twice and then let them marinate for 1 - 2 hours, turning them from time to time.

After the marinating time has over , beat the eggs with the juice of the other lemon, add a chopped parsley and a pinch of salt.

Shell the toasted pistachios and then crush them in a mortar into coarse pieces. Put the pistachios in a bowl and mix them with a little salt and the breadcrumbs.

Pass the chicken drumsticks in the egg and then  well in the breadcrumbs.

Put the  oil in a non-stick pan, heat it and fry the chicken legs, over a moderate heat, for 10 minutes per side.

When cooked, place the chicken thighs on absorbent paper and then wrap the ends of the thighs in red foil, decorate with a few sprigs of rosemary and serve the Christmas chicken thighs on a bed of salad and garnished with slices.
