Christmas fougasse

Fougasse is a provencal orange flavored bread recipe which  is a typical  french christmas  dessert .It is part of the traditon of the 13  Christmas desserts, taking its name from the ancient fogatza which means the fire in latin.

The bread is nice with its 7 notches and sesame seeds .



Preparation time: 30 min

Cooking time: 20 min

Toatal time; 170 minutes

Serves:  6 - 8 people


550 g plain flour

1 pinch of salt

120 g sugar

250 ml of lukewarm water

50 ml olive oil

1 packet of dehydrated baker's yeast

5 ml orange blossom water

 25   g Candied oranges or mixed candied fruits

anise or sesame seeds

1 egg yolk 

granulated sugar


Preparation:


In a bowl, dissolve the yeast in lukewarm water and let stand 10 minutes.

Gradually add while stirring the olive oil, orange water, sugar and flour.

Knead until the dough comes off.

Add the candied fruit, knead and form a ball with the dough.

Put in a  floured container, cover with a clean cloth and leave to double in volume in a warm place.

Resume and flatten on a floured work surface with a floured roller.

Make an oval shape, make 7 notches using a sharp knife.

Slightly stretch the dough to open the notches.

Brush with egg yolk and sprinkle with granulated sugar.

Preheat the oven to 180 ° C.

Bake for 20 min.

Take out and let cool
