Christmas chowder



Chowder is an amazing dish of canadian cuisine .In Christmas eve dinners chowder would be a most perfect one pot meal .Serve just with rustic bread  for winter meals .We add a special ingredient in this recipe .It is turmeric . You can use saffron instead of that .

 To what your appetite as the holidays approach, we offer a tasty Christmas chowder with mussels. , this recipe is ideal for warming up your  any winter meal. 

Ingredients

1 onion

2 cloves garlic

4 tablespoons of cooking oil 

1 kg of mussels, trimmed and washed

2 tablespoons of flour

1/2 teaspoon of turmeric or saffron

1 seeded tomato

1 liter of water

300 g of potatoes

150 g corn kernels

125 ml of heavy  cream or thick milk 

2 tablespoons of flat-leaf parsley

Salt

Pepper


Preparation

In a casserole dish, brown the minced garlic and onion with 2 tablespoons of oil  .

Add the mussels, stir and cook for 5 minutes. Keep the mussels open and discard those that remain closed.

Filter the cooking juices and set aside

Shell the mussels and reserve them in their cooking juices.

In the casserole dish which was used to cook the mussels, pour 2 tablespoons of oil  . Add the tomato, diced potatoes and  turmeric and flour. Stir so that the flour browns slightly and gradually add the mussel juice to thin out, stirring each time to avoid lumps.

 Fill over with a liter of water, salt and pepper and bring to the boil. Simmer for 10 to 15 minutes (to check doneness, the potatoes should be barely tender) .

Add the mussels, corn and cream and continue cooking for 5 minutes. Adjust the seasoning and add the parsley to the plates just before serving.
