Christmas arab rice

 

Let's talk about Christmas traditions! In Peru, one of the most classic accompaniments to turkey is Arabian rice, but we give it a different touch to the original recipe. We add raisins as well as a sweet component to enrich the flavors. Usually this component is Coca Cola, but this time we are going to replace it with soy sauce for the color and brown sugar for the sweet touch.


This rice is really very rich and goes excellent with turkey and its sauce . Also on my Christmas table there are never enough bittersweet dishes because for me that is very Christmas. Peruvian Christmas Arab Rice

Low Preparation time: 10 minutes

Cook time: 20 minutes

Total time: 30 minutes 

Servings: 6 people 

Ingredients

2 tbsp olive oil

100 g spaghetti  or angel hair broken into pieces about 5cm long

1 garlic clove minced, grated or minced

2 cups white rice 

1 tbsp soy sauce 

2.5 cups boiling water

1 tbsp brown sugar

100 g brown raisins, hydrated for 10 min in boiling water

salt to taste

toasted and chopped almonds for garnish


Dissolve the brown sugar in the boiling water in a bowl.

Toast the pasta pieces in the olive oil until they are very golden. Remove them from the pot.

Add more olive oil if necessary and cook the garlic for a minute. Then add the rice and mix for 2 minutes to heat it.

Add the raisins, pasta, soy sauce, salt and water and mix. Taste the water to see if it is salty enough.

Let it come to a boil and reduce the heat to a minimum. Put a lid on the pot and let it cook for around 20 minutes. If your burner is very intense and the minimum is not so low, you can put a frying pan on the bottom of the pot so that the less strong heat reaches it.

Uncover the pot and with a fork look to the side if all the water has evaporated.

 If it is already dry, use a fork to separate the grains of rice and make it spongy and grained.

Serve hot and garnish  the chopped almonds.
