christmas potatoes



This is a very easy Christmas side dish for christmas dinner .You can make it in the oven or in stovetop .If you bake it in the oven  please sprinkle some cheese on the top of the casserole   .

preparation time ; 30 - 40 minutes 
serves ;    4 

Ingredients 

1 cup chicken stock
1 cup of  milk
2 tbsp  all purpose flour
 1/4 tsp kosher salt
1/2 tsp onion powder or 2 tablespoon minced onion 
1/2 tsp garlic powder or minced garlic 
1/2 tsp fresh ground black pepper
2 large  boiled potatoes, in jackets
1/4  large onion, chopped
100 g  sour cream or yoghurt 
2  tbsp melted butter
Salt and pepper to taste


Preparation 
Add 1/2 cup of milk with the chicken stock to a medium sauce pan and bring to a low boil.

Meanwhile, mix the flour and the rest of the ingredients in a medium bowl.  Add milk and whisk until smooth.

Add milk mixture to the sauce pan and lower heat to a simmer, stirring constantly as the soup thickens. About 5 minutes.  It will thicken as it cools.  

Cool potatoes, peel and dice. Mix onion with sour cream, then rest of ingredients. Pour over and mix with potatoes. 

Put into 9 x 13 inch pan. Sprinkle 1 to 1 1/2 cup shredded cheese. Bake at 350 degrees for 30  minutes .

Or mix everything in a pot and cook over medium heat for 10 to 15 minutes  .
