We use a batter similar to christmas cake batter to make this christmas cupcakes .I call this be
rich because we use a large amount of butter .We decorate it with apricort jam. If you dont have apricot jam ,use another jam such as orange or pineapple jam.
I think its better to use freshly homemade candied orange peels or newly brought orange peels for a rich christmas taste and look.
Baking time;18 minutes
Ingredients
200 g flour
200 g melted butter
3 eggs
160 g brown sugar
100 g candied fruit mixture
1/2 tsp cinnamon
1 tsp of vanilla sugar
1 tsp of baking powder
For decoration
1 small can of candied orange peel
Apricot jam
Preparation
Preheat your oven to 180 ° C
In a bowl mix the flour, the 2 sugars, the cinnamon and the baking powder.
Add the eggs and the melted butter, mix to have a homogeneous mixture.
Add the candied fruit mixture and mix again.
Pour your batter into muffin tins and bake for 18 minutes.
Remove from the oven, using a spoon, spread a little apricot jam on each muffin and arrange a candied orange peel.
