christmas stollen


Like fruit cake in UK ,stollen is the typical german and austrian christmas cake .It is more buttery and fruity than normal fruit breads .Normally it is baked without a mould and garnish with butter and sugar .Like Dutch people you can put a piece of marizpan or almond paste in the middle of the bread .

serves; 4
baking time ;30 minutes

700  g    plain or All Purpose flour
70 g     of      yeast
220 ml milk
250  g       butter
3              Egg yolk
100 g Icing sugar
8 salt
100  Butter for spreading
80  g Icing sugar for garnish
1  packet Vanilla sugar for garnish ( or  2 tbsp of sugar +1 tsp vanilla powder or extract )

Ingredients for the fruit mix
220  g Raisins
1  glass of rum or apple/orange juice
1  glass of water
80     g Walnuts (chopped)
120  g   candied orange peel

*** 50 g of almond paste can be added before baking to the middle of the bread .



 preparation
The raisins are soaked in rum and water  overnight.
In a  bowl add  in the lukewarm milk, yeast, sugar and flour. Mix the butter, yolk and icing sugar until frothy.
Now knead the flour mixture , butter and yolk mixture with the spices and the flour into a dough. Cover the dough with a cloth and let it rest for 30 minutes.
Knead the soaked raisins, other fruits and nuts  into the dough, then knead it briefly with the machine or with hands and let it rest for 30 minutes.
Dust the dough with flour and roll out a long stick, shape it into a rectangle or shape into a rectangular shape and put it on baking paper. Let it rest for 20 minutes. You can also put the dough in a baking tin lined with baking paper.Perheat oven at 170 d celcius.
Bake in a preheated oven  for approx. 60 minutes at top and bottom heat. Brush the warm stollen well with butter and sprinkle with sugar and vanilla sugar .
