Christmas pancit noodles



Christmas pancit is one of the most popular Filipino Christmas dishes, so naturally, it’s something I’ve always wanted to make myself. I’ve had this recipe for a few years now, but for one reason or another, I’ve never gotten around to trying it out.

You can use more meat if you like.


Serves ; 4
Preparation time ;30 minutes 

sauce -
2 tablespoons light soy sauce
2 tablespoons water
1/2 tablespoons sesame oil
1/2 tablespoon sugar
⅛ teaspoon finely minced garlic
⅛ teaspoon freshly ground black pepper
1 teaspoon red wine or vinegar 

Mix all the ingredients together until well blended. Stir before using.

noodles -

3 tbsp Cooking oil
5 cloves Garlic, minced
1  Medium sized red onion, sliced
50 grams chicken or pork , boiled until tender and sliced (reserve the 1 cup broth)
50 grams Chicken liver, boiled and sliced
3 tbsp Chopped parsley or celery or coriander 
1 chicken broth cube 
2 cups Sliced cabbage
1 Small sized Carrot, sliced into strips
1/4 tsp Ground black pepper
2 1/2 cups water
400 grams chow mein noodles 
6 tbsp Cooking oil
1 & ½ tsp Chopped spring onions
6 tbsp seasoning sauce (  recipe above  )

Begin by getting your wok or big shallow pan nice and hot over medium heat. Pour about 3 tbsp oil and throw in the garlic and onion. Sauté before adding the chicken liver and mer . Stir fry until the pork is brown in color.
 
Add parsley ,seasoning  cube, cabbage, carrots and black pepper. Mix all the veggies until they are half-cooked.
 
Pour water and 1 cup of reserved broth then bring to a boil for about 2 minutes. Strain out the meats and vegetables from the broth to prevent over-cooking. Then, set this aside before cooking the noodles in the broth until soft.
 
Mix the veggies and meat with the noodles.
 
In a separate small pan, heat 6 tbsp of oil and add spring onions. Cook for 2 minutes then add Seasoning sauce . Mix well then toss with the cooked noodles .
