Christmas lentil and mushroom roast

This is a easy Xmas main dish for vegans with mushrooms ,lentils and nuts .We also add chia seeds which is normally added to vegan foods .This is a protein rich  Christmas alternative full of nutrition . You should use spelt ted or small seed lentils like green lentils to make this roast .

Serve with a vegan gravy and a salad for the Christmas dinner .

- 1  onion

- 2 cloves garlic

- 250 g of mushrooms

- 150 g of cooked lentils

- 5o ml  of white wine (vegan) or vegetable broth

- 40 g of cashew nuts

- 40 g of  almonds

- 100 g of shelled walnuts

- 2 tablespoons of chia seeds or flax seeds

- 2 tablespoons of chickpea flour

- 1 tablespoon of soy sauce

- 1 teaspoon of dried thyme

- a small bunch of parsley 

- olive oil

- salt

- pepper 

 - 1 tablespoon of vegan milk for the gilding

  - 1 block  puff pastry , vegan if like






 Peel and  chop the onion finely. Brown it in a pan with a drizzle of olive oil and the peeled and pressed garlic cloves.

 Quickly wash the  mushrooms, then  chop them them.

 When the onion becomes translucent, add the sliced ​​mushrooms to the pan. Sauté for 5 minutes, then add the cooked lentils. Extend cooking for about 3-4 minutes.
 De glaze the pan with the white wine  or broth, then simmer for 1-2 minutes, over low heat.

 Roughly chop all the nuts . Preheat the oven to 200 ° C (th.7).

 Roughly mix the contents of the pan, then pour them into a bowl. Add the  chickpea flour and chopped  nuts . Mix well.

 Add soy sauce, thyme and chopped parsley. Add the  chia seeds, then mix again. 

Season well

 Roll out the puff pastry. Place the mushroom / lentil stuffing in the center, fold up the sides to form a log . Place everything on a baking sheet. Brush with a little vegan milk, then bake for about 25 minutes. Let cool for 10 minutes before cutting.
