Christmas carrot cake


This cake is a cream cheese glazed festive treat for people who do not like fruit cake .We do not use any fruit or alcohol in these so it is good for kids as well as for adults . This is loaded with healthy ingredients like carrots and nuts .We use melted butter instead of oil in this recipe for the richness of the cake .


4  /    260 g medium whole carrots
3 eggs
190 g brown sugar
175 g melted butter
210 g  plain flour
1 tsp  of baking powder
1 teaspoon of cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
75 g of whole or chopped almonds
For the cream cheese icing

50 g cream or slightly melted butter
100 g of  cream cheese
75 g icing sugar

Instructions

Grate your carrots , set aside.

Break the eggs, add the sugar, beat until the mixture turns white .Add the melted butter .

Add the flour, baking powder and spices, beat  well .
Add the carrots and almonds .

In a preheated oven, bake at 180 ° C for 45 min to 60 min, to check cake using  a knife which should come out slightly damp.


While cooking, prepare the topping by beating together the butter, cream cheese and icing sugar with an electric mixer or whisk.

Once the cake is cooked and cooled you can  ice  it with cream cheese.
