christmas biscotti



This is an cookies recipe similar to  italian biscotti .But it is more spicy and nutty than italian  biscottis .
It is a really nice baked goodies .

preparation time ; 1 hour


500 g Wheat flour 
250 g sugar
200 g Walnuts
50 g soft butter
30 g Clarified butter
3rd Eggs 
2 tsp cinnamon
2 tsp Ground carnations or cardamom
2 tbsp Almond liqueur (e.g. amaretto) or almond extract + water
1 tsp baking powder
grated peel of an untreated orange and lemon



For the  cantuccini, mix the flour with the baking powder and sieve in a bowl. Whisk the eggs. Add all the ingredients  the walnuts and knead thoroughly using the kneading hooks on the hand mixer or using hands.

Take the dough out of the bowl and use your hands on a floured worktop to make a smooth dough. Add in the walnuts.

Divide the dough into four equal portions and form into baking sheet-long rolls. Place the rolls on a baking sheet lined with baking paper and bake in the preheated oven on the middle shelf for about 45 minutes.

Let the dough rolls rest for about 5 minutes after baking. Then cut the hot rolls diagonally into approximately 2 cm thick slices. Let the Christmas cantuccini cool completely before packing.
